BESS TRUMAN'S OZARK PUDDING

1 egg
3/4 cup sugar
2 tablespoons all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup chopped peeled apples
1/2 cup chopped nuts
1 teaspoon vanilla
Whipped cream (with a touch of rum, if desired)
or vanilla ice cream

Preheat the oven to 350 degrees. Grease a 10-inch pie pan.

Beat the egg and the sugar together until smooth. Add the flour, baking powder and salt. Blend well. Fold in the apples, nuts and vanilla. Pour into the prepared pie pan and bake for 30 to 35 minutes. Remove from the oven; the pudding will fall, but it's supposed to. Serve warm with whipped cream or ice cream. Serves 6.

BESS TRUMAN'S COCONUT BALLS

1-1/2 cup coconut
2/3 cup sweetened condensed milk
Dash of salt
1 teaspoon vanilla
1/4 teaspoon almond extract

Combine ingredients and make into balls. Bake on greased sheet at 350 degrees for 15 minutes, or until brown.

Makes 18 coconut balls.

BESS TRUMAN'S PUNCH

4 quarts grape juice
3 quarts ginger ale
1 quart lemon juice
3 gallons water
Sugar to taste

Keep cool by using a 2 quart brick of Lemon Ice in the punch bowl.
