BARACK OBAMA CHILI

1 large onion, chopped
1 green pepper, chopped
Several cloves of garlic, chopped
1 T. olive oil
1 lb. ground turkey or beef
1/4 tsp. ground cumin
1/4 tsp. ground oregano
1/4 tsp. ground turmeric
1/4 tsp. ground basil
1 T. chili powder
3 T. red wine vinegar
Several tomatoes, depending on size, chopped
1 can red kidney beans

Saute onions, green pepper and garlic in olive oil until soft. Add ground meat and brown.

Combine spices together into a mixture, then add to ground meat. Add red wine vinegar.

Add tomatoes and let simmer, until tomatoes cook down.

Add kidney beans and cook for a few more minutes.

Serve over white or brown rice. Garnish with grated cheddar cheese, onions and sour cream.

MICHELLE OBAMA'S SHORTBREAD COOKIES

1 c. or 2 sticks unsalted butter, softened
1 c. sugar
1 egg, separated
1-1/2 T. Amaretto
1/4 tsp. salt
1 tsp. grated orange rind
1 tsp. grated lemon rind
2 c. flour
3/4 c. slivered almonds

Preheat oven to 300°.Beat sugar and butter until mixture is smooth.

Slowly add egg yolk, Amaretto, salt, orange and lemon rind, mixing well.

Slowly mix in flour until mixture is well blended.

Pat the mixture into an even layer in an ungreased 10 by 15 inch jelly roll pan.

Whisk the egg white until foaming and brush on top of dough. Sprinkle with almonds.

Bake for 25 to 35 minutes until lightly browned. Cool slightly and cut into two inch squares while still warm. Yield: 40 squares

MICHELLE OBAMA'S NO CREAM CREAMED SPINACH

2 lbs. baby spinach, washed and cleaned
2 T. olive oil
4 shallots, minced
2 garlic cloves, minced
Salt and freshly ground pepper.

Blanch half a pound of spinach in salted, boiling water. Immediately, "shock" the blanched spinach in a bowl of iced water. Drain and squeeze out the excess water. Puree in a blender. Set aside.

In a large skillet, sweat the shallots and garlic until translucent. Add the rest of the spinach leaves. Toss and sauté until wilted. Fold in the spinach puree. Season with salt and pepper. Serves 6.
