ELLEN ARTHUR'S BAKED SALMON

Desired size salmon, split by the fisherman
1 tsp. salt
1/4 tsp. pepper
3 c. bread, cubed
Butter, for basting

Wash and dry the fish. Sprinkle with inside with salt & pepper. Stuff with 3 c. seasoned, cubed bread. Have ready a small grating in a baking pan; lay the fish on this, with bits of butter over it. Set in 450-degree oven for 10 minutes; then reduce heat to 425-degrees and bake 30 to 35 minutes longer, until tender.

Baste frequently and generously with butter. WHen the fish is nicely browned, butter a sheet of parchment paper and lay over the fish to prevent from getting too dry. Serve on a hot dish.
